In the 1980s, a humble town in Rosario, Cavite, witnessed the rise of a culinary legend: “Tocino ni Nilo.” Nilo Ducusin, the original creator, crafted a unique version of tocino that would soon captivate taste buds across the region.

The Tocino Experience:

Nilo’s tocino boasted a delicate sweetness and a tantalizing aroma. Whether enjoyed for breakfast, lunch, or dinner, it left diners craving more. The secret? A perfect blend of flavors, complemented by a dipping sauce of sweet vinegar, minced garlic, chili, and cucumber.

From Humble Beginnings:

Nilo, a native of La Union City, worked as a swine herder in the Ricasa family’s market pigpen. When his employer passed away, Nilo inherited a small sum of money and the art of tocino-making. Determined to create something extraordinary, he meticulously perfected his recipe.

The Legacy Lives On:

Nilo’s tocino became a household favorite, and its vibrant red color symbolized the courage of the Caviteños during revolutionary times. Even after Nilo’s passing, his legacy continued through his nephews, Rodel and Noel Hugo. Their small shop, once adjacent to Devine Grace Hospital (now the site of Garcia Pawnshop), sold out daily.

A Taste of Dedication:

The Hugo brothers upheld Nilo’s commitment to quality. Their tocino, priced at four hundred pesos per kilo, flew off the shelves. The secret? A precise blend of salt, red sugar, and saltpeter, infused with love and dedication.

Nilo’s tocino transcended borders, captivating palates not only in Rosario but also worldwide. Its rich history and bold flavor made it a must-try for anyone seeking an authentic culinary experience.
